This mildly spiced curry is a delicious change of pace for a family dinner.

Servings: 4 servings

ingredients

4 thawed   ChicNSteakes
1 tablespoon   oil
1   garlic clove, minced
1 medium   green pepper, cut into strips
1 teaspoon   curry powder
1/2 teaspoon   ground ginger
2 tablespoons   flour
1/2 cup   chicken broth
1/2 cup   milk
1 8 oz. can   pineapple chunks, drained
1/2 cup   raisins
1/2 cup   coconut, toasted
1/4 cup   slivered almonds, toasted
3 cups   cooked rice

Directions

1. Cut thawed ChicNSteakes into 1-inch pieces.
2. Heat oil in a large non-stick skillet. Add chicken and garlic; cook
3 to 4 minutes or until chicken turns white.
3. Add green pepper, saute 3 minutes.
4. Sprinkle chicken with curry and ginger. Cook 3 minutes more.
3. Slowly add chicken broth to flour; mixing until well blended. Stir in milk.
4. Add to chicken mixture with raisins and pineapples. Cook and stir until
mixture is thickened. Serve over rice. Garnish with coconut and almonds.
Makes 4 servings.
