Impress your guests with these mouth watering sandwiches featuring grilled chicken steaks, vegetables and garlic basil mayonnaise on a foccacia bread.

Servings: Makes 6 servings

ingredients

6 thawed  ChicNSteakes
1 cup   light Italian salad dressing, divided
1   red or green pepper, quartered
1   zucchini, cut in half
1   small eggplant, cut into 1/2-inch slices
1   Spanish onion, cut into 1/2-inch slices
12   foccacia (Italian flat bread) slices
1/2 cup   light reduced calorie mayonnaise
1 teaspoon   dried basil leaves, crushed
1/4 teaspoon   garlic powder

Directions

Place chicken steaks in large shallow glass baking dish. Pour 1/2 cup dressing over chicken. Cover; marinate in refrigerator 30 minutes. Combine mayonnaise, basil and garlic; mix well. Refrigerate.Drain chicken discarding marinade. Grill chicken and vegetables over medium coal 10 to 12 minutes or until chicken and vegetables are tender, turning and brushing frequently with remaining dressing. Cut vegetables into strips. For each serving, spread two slices foccacia with mayonnaise fill with chicken and vegetables.
