In a small bowl, combine mayonnaise and pesto; mix lightly. Set aside. Brushthawed chicken steaks with olive oil; sprinkle with basil. Spray a large non-stickskillet with no-stick cooking spray or heat 1 tablespoon butter. Cook chicken steaks 4 to 5 minutes per side or until tender. If desired, top with provolone cheese slices. Cover pan and remove from heat; let stand 3 minutes or until cheese is melted. For each sandwich, spread two foccacia bread slices withpesto mayonnaise. Fill with spinach, tomato and chicken. Makes 4 sandwiches.
