These sandwiches are popular in trendy neighborhood deli's. Now you can make them at home with this tasty recipe.

ingredients

4 thawed  ChicNSteakes
1 teaspoon   olive oil
1/2 teaspoon   dried basil leaves
1/2 cup   mayonnaise
1/4 cup   prepared pesto
4   provolone cheese slices
1 cup   washed Spinach leaves
2   plum tomatoes, cut into slices
1 8-inch cut into four wedges  foccacia bread, split in half horizontally

Directions

In a small bowl, combine mayonnaise and pesto; mix lightly. Set aside. Brush
thawed chicken steaks with olive oil; sprinkle with basil. Spray a large non-stick
skillet with no-stick cooking spray or heat 1 tablespoon butter. Cook chicken
steaks 4 to 5 minutes per side or until tender. If desired, top with provolone cheese slices. Cover pan and remove from heat; let stand 3 minutes or until
cheese is melted. For each sandwich, spread two foccacia bread slices with
pesto mayonnaise. Fill with spinach, tomato and chicken. Makes 4 sandwiches.
