Preparation
Keep Frozen until 3 to 4 days before preparation. Thaw in refrigerator.
Roasting Instructions: Preheat the oven to 325 F. Remove the film from roast. Place the roast in a roasting pan, fat side up. Season with black pepper, whole leaf thyme (generously), garlic powder and whole bay leaf (remove bay leaf before serving). Rub seasoning over entire fat side and ends of roast. Insert meat thermometer into the center of the thickest part of the roast. The thermometer tip should never touch bone or rest in fat. Remove the roast from the oven when the thermometer reaches a temperature 5 F less than desired doneness. Once the roast is removed from the oven, cover it with foil and place it on a cutting board to rest 10 - 15 minutes prior to carving.
