Pork Loin, Center Cut Roast

Preparation
Thaw in refrigerator for 48 hours.

Roasting Instructions:
Preheat the oven to 325 F. Remove the film from roast. Place the roast in a roasting pan uncovered.
DO NOT ADD WATER
Allow 30 minutes per pound or until internal temperature reaches 170 F
Add two cups water the last 30 minutes of cooking to create drippings for sauce.
When roast is done, remove from oven and pan, place on a cutting board and allow to rest while making sauce / gravy.
